If those of you who have tried our very special jasmine pearl green tea wondered whether each little pearl (known as dragon pearl) of tea really is rolled by hand then here is the evidence. Yes, this very lovely green tea from the Fujian province in China is rested on jasmine flowers from the Guangxi province to absorb the delicate aroma of the petals. Then after scenting, the jasmine flowers are sifted leaving the tea leaves to be skilfully rolled by hand. Ready to unfurl in all their full glory when you infuse in water (80 degrees, not boiling). I wonder what these workers count at night if they have problems sleeping?
